GRILLED CORNISH HENS WITH CITRUS AND HONEY GLAZE
This is a great dish for entertaining. If you don’t have Cornish hens, use this delicious glaze to liven up chicken or fish instead.
SERVES 8 | LEVEL: JUMP SHOT
For the Cornish hens:
4 Cornish hens, halved
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper to taste
Mild paprika to taste
4 lemons, halved
8 sprigs fresh rosemary
For the citrus and honey glaze:
½ cup honey
¼ cup freshly squeezed orange juice
2 tablespoons freshly squeezed lime juice
2 tablespoons light brown sugar
1 teaspoon ground cinnamon
